In setting text box you should enter the id/s of the categories on which you don't want the filters to be shown, splitted by comma.
You can get the id of certain category from the database or from the administration -> Catalog -> Categories -> List -> Your category -> Edit. On the end of the url you will see a number. This is the category id that you must enter in the Category Ids (Splitted by comma) text box.

This is controlled from the Conditions tab. If you open it you will see an Active setting, also you can set the Default State to Fail, it will have the same effect.

1) The easiest way to determine the excel spreadsheet format is to create a product and export it to excel, open the generated file and use it as an model.
2) Yes, if you go to product edit page, you will see a tab called Category Mappings. From there you can map the product to the categories you want it to be in.
3) Can you elaborate more on this ? Do you mean the filter panels by filter features ?
4) Maybe the nopCommerce documentation about the Payment Methods Configuration will be of help to you. Also check PayPal Standart and PayPal Direct.
5) You can do it from admin -> Configuration -> Payment -> Payment Methods. Refer to nopCommerce documentation for more information.
6) The compare button is displayed on the Product Details page. If you want your customers to be able to use the compare button without opening the Product Details page you can use our QuickView plugin. It is able to display the compare button in its popup window. Here is the plugin documentation.
